Everyone loves a sweetcorn fritter, and our baked ones are just as tasty without being fried and greasy. Great for little tummies! Makes 5-6 fritters.
1 large Charlotte potato boiled and mashed
150g Frozen sweetcorn
1/4 cup chickpea flour
1 teaspoon lime juice
1/4 onion very finely diced
1/2 clove garlic diced finely
1. Pre-heat fan assisted oven to 175 degrees C.
2. Mix together mashed potato, corn kernels, onion, garlic and lime.
3. Mix in beaten egg and chickpea flour, mix thoroughly.
4. Spoon mixture into small silicon cases and cook in pre-heated oven for 25 minutes.
