Pulses are an excellent source of protein, which helps keep little bellies fuller for longer. Instead of using red meat we have used black-eyed beans and vegetable purees, which are easily made by boiling down vegetables and whizzing up in the blender. For older kids, serve with a wholemeal bap and slices of fresh tomato and lettuce.
1 cup sweet potato puree
2 tbls pumpkin puree
1 spring onion finely chopped
1 small garlic clove finely chopped
½ tbls olive oil for frying
½ tin of black-eyed beans
½ cup breadcrumbs
Wholemeal flour for dusting
1. Lightly fry spring onion and garlic in olive oil.
2. Mix together sweet potato puree, pumpkin puree, black-eyed beans, breadcrumbs spring onion and garlic.
3.Blend in food blender until smooth (but not too watery).
4.Make into burgers. Lightly dust with wholemeal flour.
5. Lightly fry in olive oil for a couple of minutes on each side.
6. Cook in over at 175 degrees for 15 minutes.
